The minerality and power of Sèvre et Maine sur Lie. 80-year-old vines harvested by hand.

Grape variety: Melon de Bourgogne Terroir: This ‘Vieille Vigne’ wine comes from the oldest vines at the estate with 80 years of age and from our finest quality vineyards plots. The silty, sandy soil on micaschist bedrock produces a rich and powerful wine. Winemaking methods: Our Vieille Vigne is made from hand-harvested grapes and undergoes extended lees ageing of ten months. Bâtonnage (lees stirring) is performed, very frequently during the first weeks and then less frequently as the months go on. Bottling: After six months of ageing on the fermentation lees in the traditional manner, the wine is racked off and directly bottled. Bottling is done at the estate, generally in June. Tasting impressions: Appearance: Pale lemon-gold colour. Nose: Mineral driven nose with a mix of gunflint and white fruit aromas. Palate: This wine is powerful, oily and long on the palate, with a grippiness to it in its first months which fades over time. Dried and candied fruit flavours combined with strong minerality make this a highly complex wine. Suggested food pairings: Younger vintages work well as an aperitif or with fish in sauce, while five-year old vintages will suit white meats or cheese. Serve well-chilled from 6°C to 10°C. Ageing recommendations: Will age for up to five years.
