Domaine Saint Martin has been in existence since 1830, when it comprised 10 ha of vines in a single block in the commune of Château Thébaud. Today, it extends over 9 ha, still in a single block. A wine of finesse and elegance. Bottled in the year following harvest, but sold after a year's bottle ageing to showcase this special terroir. Appellation : Muscadet Sèvre & Maine sur Lie Location : 9-hectare estate on the Maine hillsides at Château Thébaud Geology : Ancient Armorican Massif soil composed of Micaschists and Gneiss Grape variety : 100% Melon B Yield : 55 hl/ha Vine age : 35 to 45 years Planting density : 6,500 vines/ha Vineyard management : Guyot nantais pruning, trellised and grassed vines Vinification : fermentation and ageing on lees with stirring in temperature-controlled vats Aging : 6 months exclusively on fine lees. Bottling : In-house. Exclusively on lees from April following harvest. Marketing : One year after harvest Serve at 11° (not chilled), within 5 years of harvest. Ideal as an aperitif, with seafood, grilled fish and white meats.
