Grapes varieties:100% Chenin Terroir : Schist degradation, North exposure, Vines of 45 years old Vinification : Hand-harvested. Slow pressing, Cold setting. Fermentation with wild yeasts in barrels for 10 months. Partial Malolactic fermentation. Lees stirring during ageing. Tasting notes : Pale gold color. Notes of grapefruits, toasted bread and flint. Saline palate. Full bodies wine, well balanced with tension. Good potential of ageing. Tasting advices : Ready to drink now, can wait 5 - 10 years Serving temperature 8 - 10°C. Food pairing :To pair with white meats, scallops, lobster or cheese.
