100% Cabernet Franc
Waiting for the richest possible ripening. Delicate manual harvest on October 7th, 2019. Manual sorting before total grape peeling. Long and gentle maceration in 500l barrels: 29 days with 2 drops. Malo-lactic fermentation in barrels as well.
Maturation :
24 months ageeing in new barrels of 220L. Bottling on September 2021.
Tasting :
The robe is deep and powerful, garnet with purple edges, signs of a beautiful purity of Cabernet Franc grains. The nose, generous and elegant, mixes black fruit aromas with a touch of raspberry liqueur. The woody and delicately vanilla aromas of its fermentation and ageing in barrels increase the aromatic complexity. The mouth is in the image of the nose: gourmet, fresh generous while being perfectly harmonious, structured and finely wooded.
This wine will go very well with any type of game, as well as many red meats and soft cheeses.
