This cuvee of Saumur Champigny is produced from old vines (50 to 80 years old).
100% Cabernet Franc

Vinification :
Harvest from 27th to 30th September
Full destemming of the grapes
Long and gentle maceration between 21 and 24 days.
Temperature monitoring (23-29°), soft pumping over with a 20 hl balloon inserted into the vat and deflated daily.

Maturation :
At the end of malolactic fermentation, after the second racking, the wine is oxygenated by bubbling with compressed air in order to valorize all the aromatic complexity and to enrich the framework.
Pre-assembly of the different tanks in summer 2021 then, end of tankageing until bottling in December 2021.

Tasting :
The color is rich, powerful, dark garnet, which confirms the anthocyanin richness of the grapes, on this beautiful vintage.
The nose is charming. It is delivered with the characteristic elegance of the Saumur Champigny, combining complexity and great richness at the same time. We first perceive the red and black fruit compote, then the floral notes of iris and violet, and finally the spices.
The palate is frank, ample and smooth. The structure is generous and velvety. In the finish, there is no roughness, the tannins are beautifully silky, thanks to a well adapted ageing and to this promising vintage.
