White fruits and citrus zests, a frank attack, the mouth is ample and elegant.
100% hand-picked into small boxes. First quality sorting at picking, then second sort in the cellar. Pneumatique pressing with separation of juice qualities. Thermo-regulated vat fermentation (stainless) at 18°C. 8 months aging on fine lees, 1⁄2 in vat, 1⁄2 in terra-cotta jars. Malolactic fermentation blocked. Minimum sulfites as required (60ppm total in 2018), light filtration, no fining.
