Grape : 100% Cabernet Franc. Terroir : Anjou gravel on a clay-limestone base, south-facing hillside Vinification:

Fermentation of the sorted and de-stemmed berries to extract only the fruit from the grapes and avoid vegetal aromas. Pre-fermentation cold maceration for one week to preserve the freshness of the fruit by starting the aromatic extraction without alcohol, Fermentation and maceration for one month with regular pumping over adapted according to the tasting. Wine profile: We chose cold pre-fermentation maceration as a means of expression because we wanted to highlight the fruit of Cabernet Franc. Le Paradis is a fruity and generous wine, endowed with a beautiful tannic structure and a generous amplitude in the mouth, it is the reflection of a racy and frank red wine from Anjou. Tasting note: The nose is deep, generous and captivating, with notes of liquorice. A sensation of freshness is expressed by a slightly vegetal and minty touch.
