Grapes varieties:100% Cabernet Franc Terroir : Clay-loam, schist subsoil. North-East exposure. 40 years old vines Vinification : Hand-harvested, sorting in the vineyard. 15% of whole grape, cold maceration, 1 pump over per day. No sulphur fermentation, wild yeasts. Ageing for 10 months in barrels Tasting notes : Grenat color. Complex nose with floral notes (violette), strawberry and spicy aromas. On the palate, opulence and richness are well balanced with fresness and smooth tannins. Good potential of ageing. Tasting advices : Ready to drink now, can wait 5 - 10 years Serving temperature 14 - 16°C. Food pairing : Enjoy with meat dishes, cheese plate or with autumn vegetables.
