Sweet white wine 2018, 100 % chenin, appellation Coteaux du Layon Premier Cru Chaume, 120 g/l of sugar
This sweet white wine is made from chenin grape variety. It is produced on appellation Coteaux du Layon Premier Cru Chaume. This is a 2018 vintage. The soil is composed of clays and schists. The vines are 50 years old. After successive sorting on vines, in order to select the bunches affected by Botrytis cinerea (noble rot), the harvest is carried out manually. The juice is obtained after pneumatic pressing. Alcoholic fermentation and ageing takes place in 12 hectolitre wood tank and 500 liters barrels for 18 months. Wine tasting : a golden yellow color, intense and deep. The nose is complex with aromas of candied fruit and honey. The palate is marked by aromatic persistence, with a long finish. The aging potential is between 15 to 20 years. This wine can be enjoyed on its own but will also go perfectly with blue-veined cheeses, foie gras and spicy dishes. Operating temperature between 6 to 8°C. 2022 is the official year of certification in Organic Agriculture.
