Dry white wine 2020, 100% chenin, appellation Savennières

This dry white wine of gastronomy is made from the Chenin grape variety. It is produced on the appellation d'origine contrôlée Savennières. The soil is composed of aeolian sands, volcanic stones, schists and granites on a 1.80-hectare Clos on the banks of the Loire. The vines are 25 years old. The harvest is carried out manually in 25 kg boxes. The juice is obtained by pneumatic pressing. The alcoholic fermentation takes place in 500-litre French oak barrels, 20% of which are new. The ageing continues on total lees for 12 to 15 months without any racking before bottling at the estate. Wine tasting : the nose is crystalline, notes of citrus, white flesh fruits appear as well as a woody touch that remains subtle. The palate is tense, fresh with a long and persistent finish. The aging potential is between 10 to 12 years. This dry white wine of gastronomy will be combined with mushroom risotto, shellfish, fish in sauces and white meats. Serving temperature between 10 and 12°C, ideally settled and served after 1 hour of opening. 2022 is the official year of certification in Organic Agriculture.
