Caught off the coast of St Gilles Croix de Vie in Vendee, the vintage sardines are selected for their high rate of fat content higher than 12 % . A tradition maintained since 2004 where sardines are prepared and put inside the boxes by hand in the hours following the catch. This recipe is above all a sardine that must be allowed to age by turning the box every 6 months in order to preserve its greedy flavours.
The 2020 vintage marks the reunion of Mademoiselle Perle with her sailor, illustrated by the painter Delphine Cossais.
