Seet, soft and light. Blend of 80% Pinot Gris and 20% Sauvignon Gris

Terroir: Our Pinot Gris grows on silty, stony soils on bedrock of micaschist. With low yields, this terroir or ‘climat’ produces grapes that are rich in sugar, allowing us to make a sweet white wine. Our Sauvignon Gris also grows on silty, stony soils on bedrock of micaschist. Winemaking methods: The Pinot Gris grapes are harvested overripe in order to give us the highest possible levels of sugar. Alcoholic fermentation is stopped prematurely to obtain a wine with unfermented residual sugar of 30 to 45 grams per litre. This is achieved by chilling the wine and racking off any unfermented yeast. Bottling: Bottling takes place in March in the year after harvest. Tasting impressions for the vintage: Appearance: Pale lemon colour. Nose: Intensely aromatic with floral notes and ripe fruit aromas (pear and peach). Palate: Moderately sweet with flavours of white fruits (peach and pear). Suggested food pairings: Enjoy on its own as an aperitif, or even with foie gras. Serve well-chilled at 8°C to 10°C. Ageing recommendations: Ready to drink now, but will keep for up to five years in your cellar.
