A natural expression of the Melon de Bourgogne, to be tasted for pleasure and discovery.
Cyrus is the clever hero from the book The Mysterious Island by Jules Vernes. Like him, this vintage is an adventure: without any insecticide nor herbicide but with mulching, manual harvest, indegenous yeast and no added sulfit. Slow and continuous pressing, with no rebêche. No settling, fermentation with the yeasts of the plot, via a tank foot. Appellation : Vin de France - Natural wine - No added sulfit
