Varietal : 40% CHENIN 60% CHARDONNAY
Age of the vines : 20 yo
Soil : Clay and Limestone
Origin : Lieux-dits Les Brondes et La Garde.
VINIFICATION
Hand harvest, direct pressing, temperature regulated fermentation in stainless steel tanks.
Ageing : in vats first and then 24 months on laths. Dosage zero, sugar added zero after the wine becomes sparkling.
Yield : 60hl / hectare.
