TECHNICAL INFORMATION: Hand-harvested, selection of healthy and ripe grapes 60% Chenin and 40 %Chardonnay. Delicate pressing in a pneumatic press and selection of juices before settling. First alcoholic fermentation in stainless steel vats with temperature control at 16 - 17°c, then filtration of the wine. “Prise de mousse” in bottles with a stay on lees to obtain the aromatic complexity and finesse of the bubbles. Disgorging on request at the Château and addition of expedition liqueur to balance the "taste balance".  TASTING -Fine, regular and persistent "bubbles". - The combination of Chardonnay and Chenin gives good balance. The Chenin grape variety brings its aromas of lime blossom, apricot and lemongrass. We then perceive on the second nose, the olfactory nuances brought by its stay on lees. - The attack on the palate is straight, fresh. A reasonable acidity gives the whole a beautiful harmony and a great freshness.
