The Anjou Villages Brissac appellation is one of the only appellations in the Loire Valley that allows the Cabernet Sauvignon grape variety to reach optimal maturity. Indeed, this region benefits from a unique terroir in the Loire Valley thanks to its dry climate and its deep soil composed of graves and gravels on clay. This 100% Cabernet Sauvignon from a single plot named La Chevalerie is a gastronomic Loire wine. Grape varieties : 100% Cabernet Sauvignon Soils / Terroirs : Graves and gravels on clay Method of vinification and particularities : The grapes from each plot are tasted to ensure that they are harvested at perfect maturity: when the grapes begin to wilt, while remaining perfectly healthy. The maceration of the grapes is relatively long and lasts 3 to 4 weeks to obtain a good extraction of the tannins, bringing richness and color to the wine. The wine is then matured in French oak barrels for 12 months, bringing structure and complexity to this wine. Wine aging : 12 months in French oak barrels.
