APPEARANCE Appearance: light golden straw tending towards white gold, slightly more intense than the first, slightly hazy. Foam: fine white, not very dense, a little scattered, forming a fine collar around the glass. Bubbles: visibly rising NOSE Intensity: immediate fruity nose, with hints of acidity, Sauvignon Blanc and Chardonnay. Aromas: yeast, fruity ester, grape, apricot, apple, banana, then floral notes, lime blossom, verbena, white flowers, then spicy coriander. Aromatic complexity and finesse Fine, elegant, fruity, floral nose. PALATE Creamy texture Effervescence: well perceptible bubbles, quite large Sensation: slightly spicy Flavor: sweet Flavor: wheat, wheat flour, bread, a hint of citrus in the aftertaste Finish: slightly bitter, very discreet Dominant: refreshing FOOD PAIRING SUGGESTIONS Freshly toasted bread + goat cheese + coriander Basic dishes: Grilled fish, mussels, scallops with leek Cheeses: Fresh or semi-fresh goat's cheese Desserts: Fresh fruit salads, combinations: ginger, apple, pear Cooking: Pancake batter, waffles, espumas
