Exotic freshness and aromatic finesse. Blend of 1/3 Chardonnay, 2/3 Sauvignon Gris.

Terroir: Our Chardonnay and Sauvignon Gris grapes grow on silty, stony soils on bedrock of micaschist. With moderate yields, these vineyard plots or ‘climats’, produce wines with rich aromas and a structured palate. Winemaking: Controlled temperature fermentations help us to maximise this wine’s aromatic potential. It is then aged on lees throughout the entire winter to allow fruitiness and body to develop. Bottling: After six months of ageing, the wine is racked off and directly bottled, in early March at the estate. After an ideal three month’s rest in the cellar, the wine reveals great freshness and aromatic intensity. Tasting impressions: Appearance: Pale lemon-gold colour. Nose: Displays intense citrus and tropical fruit aromas with floral notes of broom. Palate: The wine is round, fresh and intensely fruity, with tropical and citrus fruit flavours. Suggested food pairings: Enjoy on its own as an aperitif, or with salads or fish. Serve well-chilled from 6°C to 10°C. Ageing recommendations: 12 to 36 months.
