A tribute to Louis de Sancerre
Grape variety: 100% Sauvignon blanc
Soils/Terroirs: Parcel selection of the estate’s old vines, well balanced with very good exposure on a terroir boasting flint-stone and chalky-clay soils.
Winemaking features: The best parcels of the Château de Sancerre are selected to offer a fresh and opulent wine. The juice is chosen according to criteria of freshness, fruit and complexity and then cleared by settling in order to obtain a lot of finesse and vivacity. Then, they are put in 400L oak barrels for the fermentation. These barrels are mostly made of local wood (less than 100km away).
Maturing period: Aged in oak barrels for 12 months for 85% of the volume and in stainless steel tanks for 15%.
Residual sugar: >0,5 g/L
Alcohol content: 12,5% vol.
